GRILLED QUAIL BREASTS
INGREDIENTS
- 12 quail breasts
- 12 thin rashers of pancetta
- 1 tbs extra virgin olive oil
- Good quality balsamic
- Salt and pepper
METHOD
Season quail breasts with a little salt and freshly cracked pepper. Wrap each tightly with a pancetta rasher. Heat olive oil on a grill plate or frying pan and grill quail on each side for a minute. Rest well; sprinkle each breast with a few drops of balsamic.
Serves 6 as canapés .
